Five Things Alumni Need to Know this Week—August 21

1. Today is the first day of school for Knights, and the university will welcome the largest and most diverse student body in its history, including a freshman class with a university-record GPA. Enrollment at UCF now tops 66,000 students, and the fall freshman class has an average incoming GPA of 4.05. Among the incoming freshman class are some of the nation’s top students, including 88 National Merit Scholars. A record 45 percent of current students are minorities, and 25 percent are the first in their families to attend college.

3. The UCF Marching Knights have a new home on the south side of campus following Saturday’s opening of a 3,500-square-foot building for offices and instrument storage. The facility is a welcome change for the 325-member band, which previously operated out of a trailer.

4. Alumnus Chris Sadowski ’99 was featured by Ironman.com for raising awareness and funds to combat hunger by logging 188 miles in two endurance races overseas. The Winter Park resident has completed more than 50 triathlons, including six IRONMAN races and two IRONMAN World Championship events, along with 20-plus marathons, eight ultramarathons, and numerous 5K and 10K running races. 5. Several local and national UCF Alumni chapters and clubs are hosting events this week ranging from trivia to Painting with a Twist to baseball games. Find out if one is in your area to connect with other Knights.

1. The 2016 30 Under 30 class gathered to be honored Saturday at FAIRWINDS Alumni Center during the Indoor Tailgate. They then were recognized on the field at Bright House Networks Stadium during the football game. This incredible group of individuals includes CEOs, researchers, an NBA referee, teachers, medical professionals and game developers. VIEW THE CLASS.

2. If you live in Central Florida and love UCF (who doesn’t?), then you don’t want to miss an unforgettable evening this Wednesday at the Country Club of Orlando. AlumKnights and friends of UCF are cordially invited to a social reception and a special conversation with President John C. 3. UCF Football is bowl bound! Thanks to a 24-3 victory over Cincinnati on Saturday, the Knights will be heading to a bowl game for the seventh time in the last 10 years. 4. UCF political science student Amber Mariano made headlines late last week after becoming the youngest person elected to Florida’s House of Representatives. The 21-year-old’s win was one of the biggest upsets of the Florida state races. She ran against incumbent Rep. Amanda Murphy, and defeated her in a squeaker by less than 750 votes. “It’s awesome that I get to fight for my community. “I’m ready to work,” she said. Spoken like a true Knight.

5. As we gear up for football’s final home game of the season, here are some Must Knows:

Alumnus’ sweet treats are Yum Yum in the tum tum

He may have dreamed of being a Disney animator when he grew up, but little did Joey Conicella, ’05, realize then that he would, indeed, be bringing smiles to the faces of children and big kids alike — just, in a different way.

For the past two years, his Yum Yum Cupcake Truck has been the frosting on Orlando’s food truck scene. At least six days a week, you can find Joey and his partner, Alex, baking up flavors like Funnel of Love, Key Slime, Ballad of El Churro, Cookies Got Creamed and Dough Dough Bird.

And, their creativity doesn’t end at cupcake names. Joey and Alex serve their tasty treats in stylish detail—everything from their characteristic bow ties to their shiny, silver bakery on wheels, adorned with a distinctive bright yellow retro logo and stripes.

So, what’s a typical day on a cupcake truck like? Joey says that’s what he loves most about his business. “There is no typical day! Our days are always long. We start baking very early in the morning, and trucks don’t come back from the evening events until 10 p.m.”

Yum Yum does have some competition in the area, but when we asked Joey what makes his cupcakes the best, he responded humbly.

“I never like to say that we’re ‘better’ or the ‘best,'” he explains. “Everyone has his or her own taste. Some people think we’re No. 1, and some people don’t care for us. But, everyone who bites into a Yum Yum Cupcake should know that they’re made from scratch every day in small batches. Alex and our team pour their hearts into each and every cupcake. I think people can taste that love.”

These colorful cupcake connoisseurs say they started the Yum Yum Cupcake Truck as a way to get to spend more time together. “We’ve always enjoyed being in the kitchen together, whether it was baking or cooking,” Joey says. “The whole thing was a very organic process.”

Although everything seemed to fall naturally into place, there is a secret ingredient behind his success.

“I’m the person I am today because of my four years at UCF,” Joey says. “Those years were among the best in my life. I truly love UCF and the city of Orlando. It’s filled with such positive people. On top of that, the community has embraced Yum Yum, and giving back is the least we can do to show our gratitude.” (Joey and Alex regularly donate cupcakes for various UCF events.)

As a student, Joey was a Marching Knight and a member of CAB, as well as part of the ad/PR groups, and he even started his own indie newspaper called The Floridian Slip.

This fall, Joey will be part of the leadership team for the UCF Nicholson School of Communication Alumni Chapter.
